| Gluten free flour blends |
standard- 1 c. rice flour, 1 c. sorghum flour, 1/2 c. soy flour, 1/2 c. garbonzo or fava flour, 1 c. corn or potato starch.
pastry- 1 c. rice flour, 1 c. potato flour, 1 c. tapioca flour, 1.c corn starch.
standard blend is for things like pancakes, bread and heavy items, where pastry is lighter for cakes, cookies etc.
The standard rule for mixing flour blends is 3 cups of varying flours to 1 cup of starch.
The reason for using several types of flour at a time is that all one type tends to be very solid, and does not taste as good.
